The flavor and type of tea depend on the processing method, with major categories including green tea (non-fermented), oolong tea (partially fermented), and black tea (fermented), all derived from the same plant species. While drinks made from herbs, fruits, or other plant parts are often called "herbal teas," they are technically infusions or tisanes and do not contain the leaves of Camellia sinensis.
